Recipe: Perfect Reduced Fat Cornbread

Reduced Fat Cornbread. We love cornbread, but a lot of recipes are either too dry or too high in fat for my liking. I played around with one of our favorite recipes to try and come up with a balance between the two. I was pleased with the results.

Reduced Fat Cornbread And it's absolutely perfect for dipping in soup or chili! The addition of applesauce to this recipe (and very little oil) is the key to its health-factor. In a medium mixing bowl, combine dry ingredients. You can cook Reduced Fat Cornbread using 10 ingredients and 8 steps. Here is how you cook it.

Ingredients of Reduced Fat Cornbread

  1. Prepare 1 cup of Self rising flour.
  2. You need 1 1/2 cup of Self rising corn meal.

  4. Prepare 1 cup of & 3/4 (adjust as needed) 100% fat free lactaid milk.
  5. It's 1/4 cup of reduced fat mayo.
  6. Prepare 3 tbs of country crock light tub butter.

If using stir in corn and jalapeno peppers. Low Carb Cornbread tastes so much like traditional southern cornbread, but without all the sugar or starch! Reduced Fat Cornbread instructions

  1. In bowl combine flour, cornmeal, mayo, egg & milk & 1tsp of that butter the rest put in your iron skillet that is already sprayed w/ butter flavored cooking spray.
  2. Mix with a fine wisk if too thick add a touch more milk little at a time should be like pancake Batter thick.
  3. Preheat oven to 450 degrees.
  4. While preheating put the iron skillet that is sprayed & got the remainder of butter in it into the oven, by the time oven is all the way preheated butter should be melted & sizzling.
  5. Using pot holder pull hot pan out & pour your mixture into scalding pan & place back in oven, set timer for 30 min.
  6. Test at 25 min with a knife to see if it comes out Clean if it does it's ready if not leave in oven until knife does come out clean.
  7. When done take out turn oven off & In a few minutes flip onto plate & WA-LA.
  8. Mmmm - mmmm.

It gets it's Mexican inspiration from the addition of chopped sweet red pepper and and reduced fat Monterey Jack cheese. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Do not over mix, stir only until well blended. In a medium bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt. In a large mixing bowl, combine all other ingredients - corn, low-fat cottage cheese, milk, eggs, canned green chilies and chopped red bell pepper.
